Fried Dumpling Machine Operation Guide

Post on 03/04/2023

Pan-fried dumplings are one of the traditional Chinese dumpling making methods, and the fried dumpling machine is a machine invented to make pan-fried dumplings, but of course its function is not only to pan-fry dumplings, but also to pan-fry steaks, buns, rolls and some pan-fried dishes.

Its appearance makes the process of making fried dumplings faster, and the taste and flavor of the finished product can be standardized, so it has become a popular snack equipment in commercial kitchens, and can often be found in Chinese restaurants, Japanese and Korean restaurants, pastry stores and some Southeast Asian restaurants.

1. How to operate the fried dumpling machine?

Chefmax will share with you detailed instructions on how to make a popular dumpling dish.

Step 1: Prepare the dumpling machine

Place the machine on a smooth countertop and connect the power supply. Prepare some dumplings at room temperature or frozen (frozen dumplings usually need to be heated for longer at a lower temperature).

Step 2: Add the oil and preheat

You don’t need to put too much oil in this step, just make sure the dumplings have a crispy bottom and prevent sticking to the pan. Press the power switch on the dumpling maker and you will see the light start flashing, indicating that it is preheating.

We can set the preheating temperature, usually set at 190°C, and wait 5-10 minutes for the temperature to reach 190°C. The dumpling machine will show or remind you in the display.

Step 3: Put the dumplings

Place the dumplings evenly on the heating plate and close the lid, taking care not to squeeze the dumplings to avoid sticking together and affecting the frying effect. Again, we can set the cooking time on the fried dumpling machine, for a typical fried dumpling, it only takes 5 minutes and 30 seconds to mature.

Step 4: Add water

The purpose of adding water to the dumpling is to cook the dumpling, which is a good way to achieve a crispy exterior and avoid burning the bottom of the dumpling during prolonged frying.

Adding water will be done two minutes after the start of frying. If you need to add water manually. Please make sure that the water level does not exceed 1cm (about 70ml), and add less water if the dumplings are fresh. Then close the lid again.

Most gyoza-making machines have an automatic water filling function, which will automatically add a quantitative amount of water at the two-minute mark. It should be noted that there is a distinction between timed and quantitative water filling functions. For example, some machines are set to run for three seconds, and different floor heights can affect the water pressure, causing uncertainty about the amount of water to be added and affecting the final quality. In the case of a good fried dumpling machine, it will detect the amount of water so that it is always standard.

Step 5: Remove the dumplings

At the end of the countdown, lift the lid to check how well the dumplings have been fried, then use a dumpling spatula to remove them and place them on a plate. Successfully made fried dumplings have a crispy brown bottom and a tender interior with a unique taste and aroma.

Step 6: Clean the machine

To be safe, we need to wait for the heated plate of the machine to cool down before cleaning, but the residual heat of the heated plate may dry out the crumbs thus creating heavy sticking and hard to remove stains. The best thing to do is to add a small amount of water to the heating plate as soon as you finish cooking the last dumpling of the day, and then wipe the plate with a dry rag when the water cools down.

2. What are the advantages of the fried dumpling machine?

There are two basic advantages of commercial kitchen automation machines: efficiency and consistent quality, and the dumpling machine is no exception. It saves the chef’s time and thus labor costs, making it easy for restaurants to handle peak traffic periods.

A. Batch production

Single-head and double-head fried dumpling machine are available, with a maximum of 28-33 dumplings cooked at a time for a machine with an internal size of about 300x200mm. A double-headed dumpling machine can cook twice as many dumplings as a single-headed machine, capable of frying 400 dumplings per hour, and its two burners can work separately to make other foods, reducing production time. Therefore, the gyoza-making machine is an important tool for take-out restaurants, snack stands, and Japanese restaurants to improve efficiency and reduce labor costs.

B.Stable finished product

When the number of orders is large, errors in the control of time, temperature and water quantity can easily affect the quality of the finished product, especially if the water quantity deviates, resulting in hard or soft dumplings. Another situation is that the heating plate is not located on the horizontal plane, and the water added to the heating plate flows horizontally only by gravity, resulting in uneven water distribution, which also affects the taste and color of fried dumplings.

Automated dumpling machines were built to solve this problem, with timers, temperature controllers and automatic sprayers providing a stable temperature, time and amount of water for the cooking process, thus ensuring consistent quality of the finished product.

C. Self-editing menu

This fried dumpling machine is not only capable of making single fried dumplings, in fact it is equivalent to a small steak oven, it also has good heat retention and less heat loss, frying steak, rolls, buns, eggs and other foods it can handle. For these different ingredients, you can edit different heating programs on the control panel, set the heating temperature and time for them individually, and the time and amount of water to be put in can also be set.

D. Safety and hygiene

The fried dumplings machine is made of all stainless steel, easy to clean and sterilize, and the frying pan in contact with the food is usually made of food-grade stainless steel, which can completely ensure the hygiene and safety of the cooking process.

The lid on top of the equipment not only plays a role in thermal protection, but also prevents grease splashes and smoke spills during the cooking process, protecting the safety of operators and maintaining the commercial kitchen environment.
